         “Kristen’s Comeback”

As is their monthly ritual, the three family-tree matriarchs (mother, daughter, and daughter-in-law) sat under the shade of the great Hau Tree obviously satisfied—swirling, stirring and sipping the cold beverages set before them. The calm ocean glistened as the summer sun began its ascent to its highest point above the Pacific. Mom reached out first…

Kwai Yi, those were interesting recipes you emailed us. I especially relished your ‘Party Poke Nachos’,” the Grande Dame jested in pun. “I really believe that back in those years of the Ft. Shafter Officers’ Wives Club monthly socials, your entries would have been a big hit. Probably make it into their ‘Cooking Hawaiian Style’ cookbook.”

“I liked most of what you sent us that was from that book; however, I felt there just wasn’t enough of an air of ‘party-time’,” Kwai-Yi explained with her usual inquisitive smile. “I mean, after all, you women met every month at the Shafter O’Club as well as those popular Waikiki restaurants of the day. And, like you, there were a number of young wives in the group, probably in their very early 20s.”

“Mom was only 19 when we first came to Hawaii and Ft. Shafter,” chirped daughter Kristen, calmly correcting her younger brother’s wife. “Don’t try to intimate that I am older than I actually am.”

Another round of brunch liquid delights arrived in the nick of time, requiring another happy, ‘Okole Maluna’ (bottoms up) toast. Taking advantage of this little break, Mom looked lovingly at her eldest child and interrupted…

“Well, what about the recipes you sent us for this little challenge of ours, Kristen. Seemed like you always had strong feelings about what is considered ‘local fare’—you being a Kamehameha Schools alumna,” teased Mom. “So I was surprised you emailed desert recipes for our little game.”

Kristen reacted nonchalantly: “That was just my point of contention. I thought I’d see more deserts—other than the expected ‘Haupia’ dish or pineapple cake suggestions. I just imagined Ft. Shafter Wives would prepare easy to bake, ‘ono kine’ (delicious) cookies and sweet-stuffs like those that were served us students in our Kamehameha School cafeteria.”

“How else could I have gained all that weight during my High School years? Yes, those were the ‘onolicious’ days!” Kristen emphasized raising her dry Martini in toast.

“Hey, try out these old high school days recipes. Don’t worry about packing on the pounds,” laughed Kristen.

“Just ENJOY!!”

HAOLE BROWNIES

 

(This recipe is most like the brownies I remember as a student at Kamehameha Schools)

 

Prepare 13×9 pan (I think dark metal pan works best)

Grease and flour pan

Set oven for 300 degrees.

 

Ingredients

1c butter, melted

2c four

3 ½ c (or 1 16 oz. box) golden brown sugar

1 ¼ t vanilla

1 ½ t baking powder

3 eggs

¾ c chopped nuts (I like walnuts)

 

Combine melted butter and sugar. Add eggs one at a time; mix quickly. Add the rest of the ingredients. Pour into your prepared pan.

 

Bake 30 minutes.

 

Cool COMPLETELY before cutting

 

      

MISS CASTLE’S CHOCOLATE COOKIES

 

Use cookie sheet, ungreased (I like using silicon baking mats)

Set oven for 375 degrees

 

Ingredients

¼ c shortening (Crisco)

¼ c butter or margarine

1 c all-purpose flour

⅛ t salt

½ c sugar

⅓ c unsweetened cocoa powder

3 t milk

¼ c packed brown sugar

1 egg

1 t vanilla

⅛ t baking soda

Use “sprinkles” for garnish

 

Beat shortening and butter until smooth. Add half the flour and the rest of the ingredients until thoroughly combined. Add the rest of the flour.

 

Drop rounded teaspoons mix 2” apart on sheet. Decorate with sprinkles, if desired.

 

Bake 8-10 minutes. When done, cool on the cookie sheet for 1 minute, then move to rack.

COACH’S FAVORITE BREAD PUDDING

 

Use loaf pan, ungreased

Set oven for 300 degrees

 

Ingredients

2 c milk, scalded

5 c bread, torn (10 slices of stale sandwich bread works well)

2 eggs, slightly beaten

¾ c sugar

1 t vanilla

½ t cinnamon

¼ t nutmeg

½ c raisins

3 t butter

 

Pour scalded milk over the bread; add all ingredients except butter. Mix together until just combined; pour into loaf pan. “Dot” top with butter.

 

Bake 40-50 min (or until knife inserted comes out clean)
